My attempt at Birria Birria tacos. Whilst I had to make do with limited ingredients ( I couldn't source authentic chillies used, or the proper cheese) so I improvised with what I could get my hands on. The result was still a spicy punchy cheesy meaty deliciousness, it hit all the spots! And the second version was a playful take - A tiny Taco alternative, using tortilla wraps cut small and baked in muffin tins until lightly crisp, then filled with a spiced minced beef filling, fresh herbs, avo, yoghurt and pomegranate seeds. Good for parties! The Birria iteration was the winner here!

Mushroom spinach pasta 😋
Would have added some grilled chicken but we had none in x also like this was thrown together in about 20 minutes for a quick and easy family dinner! Would have used different pasta but had none need to do a food shop

Dinner today:
Soffrito of celery, fennel, leek, onions, garlic
Deglaze with tomato paste, white wine and fresh parsley
Blue swimmer crab meat (I used whole crab, I didn't garnish with claws or pincers, thought it would be overkill)
Garnished with fresh parsley, fennel fronds and crab oil
