Question/Advice Apparently, adding pasta water to the sauce actually makes a difference

• Upvotes

For years, I used to drain my pasta completely and then just pour the sauce on top. I never understood why restaurant pasta always seemed to have a nicer sauce that actually stuck to the noodles.

Then I randomly came across a tip saying to save a little bit of the pasta water and mix it into the sauce.

Tried it last night, adding just a small splash while tossing everything together, and wow… I could actually tell the difference. The sauce became smoother and coated the pasta so much better instead of just sitting at the bottom of the plate.

It's such a ridiculously simple trick, and somehow I'd never bothered trying it before 😂

What other little cooking tricks make a surprisingly big difference?

Question/Advice Apparently I’ve been making better burgers the wrong way round this whole time

I always used to press down on my burger patties with a spatula while they were cooking because I thought it helped them cook faster and get a better crust.

Then I learned that all I was really doing was squeezing the juices out of the meat.

Tried leaving them alone yesterday and only flipping them when they were ready, and honestly, they turned out so much juicier.

The outside still got that nice browned crust, but the inside wasn't nearly as dry.

Funny how one tiny change can make such a difference. I've probably been drying out my burgers for years without even realizing it

Hack Request How do I stop snacking so much when I get cravings?

I’m not trying to lose weight. I’m already 37 kg, and I was prediabetic, so I want to improve my eating habits and be more mindful of what I eat.

My problem is that I tend to crave snacks, especially when I want something salty or sweet, like chips or soda. I’ve tried eating fruits instead, but they take time to prepare, so I always end up going back to snacks that are easier to grab and eat.

I’ve reached a point where I really want to stop snacking altogether, but I can’t figure out how to manage the cravings. Whenever I feel like eating something, I find it difficult to resist, even when I tell myself not to snack.

For those who have experienced something similar, how did you manage your cravings? I’d appreciate any practical advice on how to break the habit and develop healthier eating habits, especially when convenience makes it so easy to snack.

How to make an easy "combination fried rice"?

i've been making my own version of spicy combination fried rice at home, with the ingredients i have at home. i have my ingredients pre-cooked and pre-portioned, and stored in the fridge. then i just mixed them all up and onto the microwave they go. so far I love the taste but feel like it could be better.

so I mixed

- 3 oz shredded chicken breasts

- 4 oz white rice

- 2 oz frozen veggie mix from sams club (carrot, corn, green beans)

- a teaspoon of soy sauce

- a tablespoon of mexican macha sauce (similar to the asian chilli crunch sauce, since i dont know what would be the closest thing to add, and i keep matcha at home all the time, also the seaseme seeds in the macha sauce give it a nice crunch)

what else could i add to make it taste more authentic given the context below?

ADDED CONTEXT:

hey so i have been trying to meal prep and i have been trying to keep it 1) as easy as possible 2) as cheap as possible 3) as non-time consuming as possible 4) as healthy as possible

I've been trying to stick mostly to a diet of chicken, rice, frozen veggies and eggs.

ive been trying to consume things that last a long time in the fridge, so no fresh vegetables (thus the frozen veggies)

anyways, ive tried different meals with those same ingredients so i dont get bored. and found that by creating my own version of combination fried rice, not only does it check all my boxes, it tastes insanely good, even though ive been eating the "temu version" or the " we have combination fried rice at home" version.

Hey all,

I've worked in a cafeteria a year ago and I was told I could get those frozen omelettes at costco (enterprise). I live in Quebec, Canada and I haven't found any.

Im like really desperate and wondering if there's any way I could make these myself and freeze them. But exactly like this, like a inch thick and no more.

I checked on Amazon too but it's only in the USA lol.

Discussion Give me your childhood memory cheap meal you loved

So as prices soar for everything I have been trying to find quick, easy, cheap meals to make. I grew up in the late 70’s early 80’s with things like “hamburger pie”.
One such meal that I always enjoyed is a bit of an odd one but I loved it and I am making it for dinner tonight. Although a slightly healthier version than back then.

Hamburg, rice and peas mixed with a can of tomato soup. It was a comfort meal of sorts for me and it hit me the other day that it has been a few decades since I have had it. I use cauliflower rice now but it’s the same premise.

You can use any vegetable you prefer as I know many don’t like peas.

So what was a childhood “cheap” meal that you still make today?
Or better yet, now that you have seen this post what meal are you going to make that you haven’t had in forever?

I tried sauteing mushrooms by starting with water per this one Japanese chef video. My mom says they look slimy and won't eat them. I think they look fine. What did I do wrong? Is she crazy or did I screw something up?

There's a video of a silent Japanese guy making sauteed mushrooms by starting them with a few tablespoons of water. Once the water was evaporated off he added a drizzle of oil and browned them. Then he added a bit of soy sauce, butter, garlic, and a pinch of salt.

I followed the video exactly except I didn't do the garlic or butter since they're going in fajitas.

do these look fine or do they look slimy and gross?

Question/Advice What to eat to get at least 80-100 grams of protein, if you cannot make food?

Our house is in renovation and we cannot use our kitchen and prefer not to wash a lot of dishes during that time.

What we have available:

- Microwave

- Airfryer

- Egg cooker

- Blender

- Rice cooker

- Sandwich grill

- Waffle iron

Canned meat/fish aren't an option (I'm picky).

Prep Made sweet potato fries with celtic sea salt and now i keep making them

Had two sweet potatoes lying around so cut them into fries, tossed them with olive oil, rosemary, garlic, black pepper and Celtic Sea Salt and put them in the oven.

That’s pretty much it. Have made it three times this week now, yummm!!!

I add a little more salt once they’re out because I like getting the odd salty bit on top instead of all of it disappearing while they cook.

Made a quick yoghurt + garlic dip with it.

If anyone has a better dip for sweet potato fries, please send it my way.

I want to make konjac noodles at home. I bought konjac flour and calcium hydroxide, but I haven't been able to get the ratios right. How do you make them? What proportions do you use?

Hack Request Any tricks for keeping chips crunchy in homemade snack mixes?

I like the idea of mixing chips with pretzels, nuts and other snacks, but different ingredients seem to lose their crunch at different rates, especially if the mix sits for a while.

Anyone figured out what works best for keeping everything crunchy?

Prep Healthy meal prep ideas - affordable and easy.

I’m eating healthy and recovering from cancer. I’m so tired and practically broke. I’d like some ideas for easy meals that I can freeze and reheat easily or just large batch that’ll last all week in the fridge. I don’t mind eating the same meal all week. I’m trying to get 100-130g protein and 1400-1600 calories per day.

You can always make traditional or expensive meals with a couple of swaps here and there.

For example Georgian cooking leans on three spices (atleast in the recipes i've done and tried) that you won't find in a regular grocery store: blue fenugreek, marigold petals (sometimes sold as "Georgian saffron"), and ground coriander. The one I often get stuck on is the marigold , a real fix is a pinch of turmeric for color plus a little sweet paprika for warmth. Not identical, but it gets a dish like satsivi into the right neighborhood without a special order.

Something like Uzbek plov has the same problem with devzira rice (a short reddish rice that soaks up broth without turning mushy), but any short-to-medium grain rice works as a substitute, just rinse it a bunch more than you might think you need to.

p.s. I ended up collecting and making a bunch of these swaps, and their originals, into two short cuisine specific e-books, they're in my profile if you're interested.

Discussion Cinnamon powder smells like dried saliva

How to actually make it taste decent in dishes? I made many dishes with it, for instance caramelized cinnamon bananas to put on my yogurt bowl but Idk if I'm just using it wrong or it's not for me (although I really want to like cinnamon powder recipes made with it look so good)

Question/Advice What frozen meals are actually good?

I’m disabled so I can’t cook much, so the faster I can make something the better, especially if frozen. I’ve tried those microwaveable meals but they are so tasteless, usually 😭 are there any anyone has tried that are actually good? Or easy meals that can be kept in the fridge or pantry for a long time?

Sick of fresh mushrooms looking like trash at the grocery store. Frozen or canned better? I use them a lot in soups and in casserole.

Egg nog pancakes

Since the season for it is coming up, I'm looking forward to using egg nog instead of milk for pancakes for holiday flavoring (also add cinnamon and/or nutmeg to the dry ingredients). It's a family favorite every year.

Hack Request Do you ever use crushed chips as seasoning?

Random thought but do you guys ever crush up chips and put them on other food?

Not like breading or anything, just sprinkle some on eggs, fries, whatever. I feel like this could be really good with the right flavor.

Cooking Method Leftover rice who? Woke up to this delicious Cheese Veg Pulao.Best morning food hack ever..🤤

Post image

Woke up to the best breakfast today🍚...My mom transformed last night's plain leftover rice into this super tasty, veggie-loaded Cheese Pulao. 🧀

Pro-Tip for saving food: Cold, leftover rice actually makes the best fried rice or pulao because the grains don't get mushy.. Just sauté your favorite chopped veggies in some butter, add regular household spices, toss in the rice, and top it off with lots of grated cheese.

It’s a 10-minute breakfast that saves food from being thrown away and tastes absolutely divine. Highly recommend trying this out guy's.👩‍🍳

Flavor grapefruit soda + rootbeer =

Post image

So I had just a little bit left of both of these and thought what the heckin heck might as well just dump them in a glass together for a full cup instead of drinking two measley half cups on separate occasions. Now what I’ve found is that these two sodas from these brands specifically when mixed create the most authentic faux tamarind flavor I’ve ever tasted!!! (Sour tamarind not sweet tamarind)….I’ve spent some time and time again eating fresh sour tamarind from a tree nearby to me and let me tell you, these two sodas mixed together literally taste exactly like it - like way more than Jarritos could ever even try! If you like Jarritos tamarind soda because you enjoy tamarind too, then hit up your local Dollar Tree and WalMart and give this a shot!!

Something Else I'm unhealthily addicted to vinegar

I’m genuinely addicted to vinegar 😭 I mix it with salt and it basically tastes like salt & vinegar crisps without the potato. I can have like 20-40 tablespoons a day and used to go through bottles so fast my parents literally banned me from having it.

I’ve stopped because I’m worried about getting some kinda gastrointestinal issue, but I can’t find anything that scratches the same salty/sour itch. Pickles and olives are close, but they give me headaches.

And no, it’s not a weight loss/ED thing I just genuinely love vinegar lol.
Any good alternatives?
