I'm actually a professional confectioner (candymaker) and I can actually confirm that we have a lot of really good chocolate here. HOWEVER, there's a ton of what's called 'compound chocolate' which is sold at grocery stores, pharmacies, and even some candy stores, that really sullies the description of chocolate.
Compound chocolate is chocolate that has had all of the cocoa butter removed, and instead it has palm oil to work as the underlying fat. This is because you will still have some chocolate flavor, but companies no longer need to worry about tempering the chocolate (so it doesn't get those ugly streaks). It looks good and is easier to keep looking good, but it is not as good and feels waxy.
It is the butroc acid that gives it that flavor , the oil thing is also true , but in my personal opinion a lot less offensive and actually works better for a milder flavor
