The Ubuntu installer has open source nouveau drivers built in, so it should at least boot and give you a display out of the 5060. You'll definitely want to install the proprietary nvidia drivers once you're in for actual performance, but you can do that after the fact through the additional drivers tool. No need to re-enable the igpu unless you run into weird boot issues. I'd just leave it disabled and see what happens.

good call on just leaving the igpu disabled, no reason to complicate things if it boots fine

It should detect your GPU automatically. The next time you open a terminal (CTRL+ALT+T) and run sudo apt update.

Then run ubuntu-drivers devices

Whichever driver is recommended remember that and run sudo apt install nvidia-driver-550 (use whichever was recommended)

Reboot your PC and after you have verified all is well run sudo apt autoremove. This will remove anything unneeded/unused and free up some space. It's a good habit to do this after each reboot following a sudo apt update/upgrade.

Will you be doing anything like gaming or anything else graphically intense?

Didn't use Ubuntu for a long time but i remember it having preinstalled nouveau drivers, they are ass and need to be replaced with proprietary ones, ubuntu should give you the option to do that either in the settings or the software manager
