No Recipe gf enchilada lasagna
wanted to try lasagna style enchiladas because i hate when stuff is too drenched in sauce and too mushy! this gave me such a well rounded texture.
i personally also hate corn tortillas so more traditional style enchiladas are hard because the tortilla cracks, so i decided to go a different route entirely.
sautéed veggies, vegan refried beans, xtreme wellness street tortillas, and homemade enchilada sauce.
absolutely will be making again!

Enchiladas are naturally gluten free as they're tradionally made with corn tortillas and it shouldnt be hard like this. Look up some traditional recipes. Yours looks hard as hell lol.

Try it New Mexico style next time- stacked like pancakes. It's my favorite way to have enchiladas as the only way I'll eat them now.
You use corn tortillas instead of flour. Lightly Fry in oil, then smother in enchilada sauce, your taco meat, onions, cheese, etc and then repeat. Top with a fried egg on top. It's heaven and we eat them almost weekly in my house.
