Recipe dill broccoli soup

i got a new cookbook last week (Plantyou Quickies by Carleigh Bodrug) and the dill broccoli soup immediately caught my eye, as i always have a massive bag of broccoli florets in the freezer. made this for dinner tonight and served with warm bread - it was delicious!

Dilly Broccoli Soup
SERVES 4 TO 6

Ingredients:
• 6 cups vegetable broth
• 1 pound broccoli (about 3 medium-size heads), chopped into florets
• 4 garlic cloves, peeled and minced
• 1 teaspoon dried oregano
• 2 teaspoons chopped fresh dill
• 2 tablespoons nutritional yeast
• ½ teaspoon salt, if desired
• ½ teaspoon freshly ground black pepper
• ½ cup uncooked orzo pasta
• 1 heaping tablespoon tahini or cashew butter (optional, for creaminess)
• Juice of 1 lemon
• Red pepper flakes

  1. Bring the broth to a boil in a large stainless-steel pot. Then add the broccoli, garlic, oregano, 1 teaspoon of the dill, nutritional yeast, salt (if using), and black pepper.
  2. Lower the heat to a simmer and cover. Allow to cook for 15 minutes, until the broccoli is fork-tender.
  3. Using a potato masher, mash the broccoli in the pot for about 30 seconds. You want to create a mix of small mashed and medium-size pieces of broccoli in the soup, for a thick texture.
  4. Add the orzo to the pot. Bring back to a boil, then continue to cook over medium heat, uncovered, until the pasta is al dente, about 10 minutes. To finish, stir in the tahini (if using) and lemon juice. Taste and adjust any seasonings, as desired, adding the red pepper flakes and the remaining fresh dill to taste.

STORAGE: If storing in the fridge, when reheated, add more water as needed to thin the broth as the orzo will absorb some of the liquid. Store in a sealed container in the fridge for up to 4 days.

Since the broccoli is going to get mashed up mostly, when I try this I think I'll also use the peeled stems and puree them before adding them. Yay or nay?

Thanks I'm going to try this. Two tsp of dill doesn't seem like enough though!

you pointing this out made me realize i absolutely went heavier on the dill - i read the recipe as 2 tbsp last night. it was still great and the dill taste was strong but not overpowering. if you like dill a lot, i'd recommend doing more dill, too.
