Question does anyone have a good recipe for a no bake pumpkin cheesecake?

I was gonna make a normal baked pumpkin cheesecake, but didn't see that the recipe said not to use violife cream cheese because it's oil based and doesn't heat well. but I already bought the violife one and I'm not a big fan of plain cream cheese. so now I'm looking for a no bake one. the no bake ones I'm seeing don't have many reviews so I'm asking here instead:)

I also hate frosting so I don't want to use the cream cheese for buttercream frosting either.

Question Recipe for sick senior who wants to stay at least vegetarian if not vegan?

A friend is a senior who really wants to stay vegan or at least vegetarian, but her body is somewhat weaker than average, and the past few months she has spent more days sick with colds than not, because she is the sole care provider for her even sicker husband and her even more senior mother. Home care is not available at all in this part of the world.

I am visiting for a week, and I want to help make some food to help her recover. Would you please share recipes you have found to be worth trying? Thank you!

Maybe it's a little bit cheating because I use store-bought vegan butter (earth balance) and vegan parmesan (violife), but this is my rendition of the popular "melting cabbage" recipes I've seen going around! I did make homemade cashew cream, so hopefully that counts for something!

Question Recipe wanted: Stew and cobbler

Any reocmmmendations for a hearty gravy stew recipe with cobblers on the top?

The recipe in question I want to make (vegan ofc) relies heavily on beef, some Stilton in the bread on top. The appearance is of a brown gravy stew, onion.

Thank you for any ideas!

This recipe's packed with nutrients and there's no added oil except for what's in the chocolate chips which you can sub with cacao nibs if you're super health conscious or just like the crunch.

Question fav queso dip recipe ?

hi everyone i’m half bay area on my mom’s side so i take every mexican/mexican-american dish extremely seriously. as such i am on a quest to unlock The Perfect Cowless Queso Dip, and i’m trying to make and eat as many variations as possible.

my quick-and-dirty go-to is that fuckass daiya cheeze sauce with nooch and garlic+onion powder to give her some depth → ro-tel original or hatch mixed in like dairy velveeta queso → whole thing heated in the microwave. but it’s just ok as you might imagine, so i’d rather have a better one or two to cook regularly and just keep 3-step daiya cheeze in my back pocket, In Queso Emergencies if you will. so could y’all please drop your favourite queso-from-scratch recipes?

(i’m looking for both the “party food”/“appetiser for the table” kind with chopped veggies AND the bright yellow processed garbage with nothing else in it and uniform flavour and texture that you get at concession stands to dip chips/put on chilli dogs and fries please!! thank you <3)

Recipe in Post Creamy Red Lentil Penne with Spinach ; 25 Minutes, 41 g Protein per Serving

This creamy red lentil penne with spinach makes a savoury 25-minute dinner with 41 g protein per serving. Really quick and saved my life with two hungry toddlers yesterday evening.

4 portions

Ingredients:

- 450 g Red lentil pasta

- 900 g Frozen spinach

- 250 ml Oat cream

- 30 g Nutritional yeast

- 1 piece Onion

- 3 piece Garlic

- 13.5 g Olive oil

- 9 g Salt

- 1.2 g Black pepper

- 0.55 g Ground nutmeg

Method:

  1. Cook the penne | Bring a large pot of water to a boil. Add the red lentil pasta and some of the salt, cook according to the packet until just tender, then reserve a mug of cooking water and drain.

  2. Soften the onion and garlic | Meanwhile, warm the olive oil in a large deep frying pan over medium heat. Add the finely chopped onion and cook until softened, then stir in the minced garlic and cook briefly until fragrant.

  3. Cook off the spinach liquid | Add the frozen spinach, cover and cook over medium heat, stirring occasionally, until fully thawed and steaming hot. You can also cook it very hot if you're in a hurry like I was. Remove the lid and cook over medium-high heat until the excess water has evaporated and the pan no longer looks "soupy".

  4. Make the creamy sauce | Reduce the heat to low. Stir in the oat cream, nutritional yeast, ground nutmeg, black pepper and remaining salt, then simmer gently until the sauce coats the spinach.

Here, you have two choices, let it as it is, or if you have difficult people at home who don't like to chew : just blend everything into a smooth sauce !

  1. Toss and serve | Add the drained red lentil pasta and gently toss until evenly coated. If the sauce is too thick, loosen it with a little reserved pasta cooking water and serve hot.

Question Veggie Grill Queso Copycat Recipe?

I just had nachos from Veggie Grill (a vegan restaurant chain) and man does that queso hit! Has anyone had success recreating it? It was kind of tangy, not too thick, I don’t think they used vegan cheese in it but that’s just my wild speculation. I really have no clue how it is made. Bonus if anyone also has a recipe for ranchero beans to replicate theirs.

Edit: After some more investigating (ordering veggie grill again) I realized that individually I don’t like either sauce, both the nacho-esque queso and the spicy pepper crema. But together they are perfect. The crema gives me sour cream vibes so I’m guessing a cashew yogurt/sour cream base while the queso seems like there is some fake cheese in it (a lot gloopier than the crema). So probably a recipe that has cashew yogurt and fake cheese along with other ingredients would be a good start.

Question idaho/gold potatoes make my stools very hard, why?

almost look like they came out of a rabbit. my colon or lower left area hurts a lot when i pass these. why does this happen to me with idaho/gold potatoes but not sweet potatoes like the japanese/korean ones?

also i still need help with greens! I only want to eat them steamed/boiled/raw. i have health issues with dried pasta (even the one with lupini beans or gluten free, surprisingly i can eat dumplings wrappers made of wheat with no issues), garlic, onions, tomato sauce, and cooked oil. i'm thinking about these greens instead of spinach/broccoli:

  • salad green lettuce, cilantro, chrysanthemum greens, mustard greens (maybe not if these taste like arugula)
  • cooked collard greens

next available appointment to see a gastroenterologist is 12 months. i'll try again to get a referral to see an allergist/immunologist. thanks for the idea!

Question Blending TVP flakes?

Has anyone ever putt just hydrated TVP flakes in a blended and blended them into a shake /smoothie? I'm thinking that could be an easy way of getting in 20-25g of protein, plus lots of fiber and some minerals, without the hassle of eating that 40-50g of TVP.

If anyone has done that, what did you put into it also, like for some flavor? Also if you didnt do it, do you have some ideas what to put? If anyone tries it now, share your experience.

Question Best Vegan "Steak" Replacements?

Hi all!
Mods, delete if not allowed, but I'm looking for recipes or full replacements for steak to bring to family dinner. Would normally use grilled mushrooms as a replacement at home but since the family is cooking, and not myself, I wanted to bring something that would be easy to just sear/grill off and be pretty...idiot proof?
Please drop recs if you have any ❤️
