Got my first clean paper towel slicing today. I only filmed one, but I got clean paper towel slices on all my kitchen knives. I used a 325/1000 grit Sharpal diamond plate (only used 325 where needed), followed by 3k shapton rockstar then stopped on 1 and 0.5 micron diamond paste on leather. Surprisingly quick process as well, 5-10 minutes per knife (they weren't in bad shape tbf). Also added a pic of the other knives for those who appreciate that (which I'm guessing is quite a few people here)
Edit: had to add the pic in the comments because for some reason I can't add pictures and videos

It was just the other day that I found how impressive it was to be able to slice clean through a paper towel when I tried to do it with a blade that I thought at the time was surgically sharp.

That's the exact feeling I had trying it for the first time. It was shaving, it was whitteling hair, it was tearing the paper towel....

Yupp exactly, I really have to get my hands on a sharpener. I don’t know why I keep putting it on the back burner.

Can definitely recommend, they're not that expensive especially considering just how they last.

I’ll have to get on it. I was looking at the K4 from TsProf

I'm sure that'll work. I have no experience with guided systems like that, but I've seen people get great results. Good luck!

Thanks! It was my very first good knife so it holds a special place in the collection. Very nice to see it this sharp

Was there a particular angle degree you were shooting for? 12 per side,14, etc?

I just followed the factory edge which for moritaka knives (the one shown) is 10 per side

It’s a very satisfying feeling! I remember the first time I saw a video of someone doing that like a year ago and thought “that isn’t real you can’t really do that.”
