multifunctional home server
I am looking for a computer for a home server that works as an ad blocker a cloud for photos, and a streaming service. What would be the minimum specs for it to run smoothly?

The services as mentioned are no biggie
The Cloud Storage aspect will be a bit of a variable.
Do you want LOTS of storage?
Do you want just enough to not need iCloud/Google Photos?
Basically what I am leaning towards is are you ok with something like 2 mid sized drives, maybe large SSDs, in a RAID 1/Mirror? Around 2-4TB usable.
Or do you want like 4/8/12 x 20TB spinners in a RAID 6/Z2 config?
If you want more bulk storage you might look at something like an HPE MicroServer or ZimaCube or others in that category.
You can also fully DIY your NAS with a MiniATX/mATX board on almost anything from the last ~8 years and the right case.
For Intel I would personally be looking at 8th gen or higher for the efficiency. 7th gen was a bit of a heater from memory.
I especially mention this because many of us may have an old desktop with a CPU and DDR3/4 RAM laying around which can be re-used for this.

Any i5/ryzen5 with 8/16 gb of ram mini pc suits for you. I'm using an Elitedesk 800, 120€ on eBay. I have PiHole for ads, JellyFin for streaming, fileHost for cloud storage, CUPS for printing server, an irc webchat and a tiny webserver for home use. Still have margin for more services.

Pretty much any computer will run Proxmox VE. Just download the ISO and image the computer. Then look at the Proxmox Community Scripts website for PiHole and Immich.
Welcome to your first r/homelab
Edit: Yes, I always recommend Proxmox over Docker. It's just better for networking and you learn a lot more. And you really don't need to touch many of the options, especially if it's just running on a computer with a single disk and a single network card.
