For me, it has to be Nethack.

Of course the tone gets a bit sci-fiy when you play some of the roles but it literally has knights and wizards.

ToME and Path of Achra. They both have such variety of builds

Random question - Is it possible to beat TOME without predetermining a meta build? I always make it up as I go but don’t have very much success

Especially on Normal, anything can win if you play well. This was a long time ago, but someone won with an anti magic archimage. And I won with a Ghoul Oozemancer.
Meta builds are obviously stronger, but with enough attention, you can win.

On Normal, yeah. I stopped sketching the whole build and just finished one damage tree plus one way to not get hit, and that got me through. The deaths were the runs where I spent the early points sampling every new talent and walked into Dreadfell with none of them done.

Bit late, but also echoing that meta builds aren't at all necessary. Nightmare is also perfectly playable with basically anything as long as you're familiar with the game. Insane starts to need meta stuff, and madness needs a lot of cheesing as well.
I think good clear order and knowing what enemies are dangerous is super important. And having consistent means of escaping iffy situations, and clearing nasty debuffs. Some classes can access those more easily, others need to rely on runes and stuff.

Gonna go with Path of Achra props to Dungeons of Dredmor also.

IMPECCABLE taste!

If not for the classical fantasy restriction I'd have said Sword of the Stars: The Pit.

Fara. It’s difficult and I haven’t beat it but I always enjoy it.
On my phone I enjoy Shattered Pixel Dungeon.

Nobody's said Rift Wizard yet, and for the wizard half of the ask it's the purest one I know. There's barely any gear, you build a spellbook out of hundreds of spells and every floor is a small turn based fight you can plan out. 2 is the finished one, 3 is still in early access.

ToME, then Path of Achra.
Both are combat focused games for the record. The best at it.

Sil-Q. Satisfies my reoccurring Tolkien itch. I’d like to learn TGGW soon

Dungeon Crawl Stone Soup
And for mainly the reason that whenever I'm in the mood to play a roguelike 9/10 I want a loot heavy sort of game (like Diablo). It also makes it much more replayable after a clear!
