My question with these is always the same. How does he solve for this exactly? Like what's going through their head? Is this just a specific trick passed down by craftsmen with unknown origin or is this person thinking in algebra or is it closer to an artist just "knowing" the shapes of anatomy.

This is basic geometry

Not something I'd know how to do, but I sure as hell would get see to it if I needed it in my job
