If your LEGO are kept in the same room as essential oil products, this is not a defect of the manufacturer.
Essential oils break down the ABS plastic.

Gingy is widely known to be breaking. So is patrick

The gingy issues are caused by a defect in the head. The hands breaking suggests it's caused by something else in this case, as does the other set OP says is breaking. Multiple issues that aren't known manufacturing defects points to an environmental or user issue.

The arms breaking has been noted in other Gingy's as well, it's just not as pervasive an issue as the heads.

That's fine, but it doesn't explain the other set with multiple pieces from multiple colors breaking down. The smart money says that in this instance OP is somehow causing their LEGO to degrade.

Two things can be true. OP might have their mandrake next to a diffuser or in a window, and their Gingy could just have defective arms like others have had. Smart money doesn't bet against a known defect being something other than a known defect.

Those olive pieces are also broken, there's definitely some oil substance there that's breaking everything up

As others have said essential oils. But also wash your hands with unscented soap before building, especially if you use any hand creams or other similar products.

For once it isn't LEGO's fault. Essential oils and some scented hand creams break down ABS plastic.

You definitely have some kind of reaction, probably chemical, going on and doing damage to your lego, my friend. Gingy is not known to break in THAT way and the rest of your pieces shouldn't be doing that.

I think everyone has blasted you enough with this oil business but def something up. My 3 year old has been obsessively tinkering with my Shrek CMFs and they’re still going strong. If you know anything about toddlers; that’s a miracle
