I don't have experience with Java for web, but Maven is a build automation tool. It's so you can build, test, compile, and package your project without needing to perform each step manually. I'm pretty sure jdbc is a database api tool. And if so, then it acts as a connection to your database. You'd use it to maintain a connection, and most likely store and manipulate the data in the DB. I know spring boot is a development framework for Java, so it should offer tools and libraries for building apps faster. Most likely handling things like config, dependencies, server setup, and making api's easier to work with.
I'd learn what each was designed to help with at a high-level and dig deeper as you go.

I mainly use Micronaut instead of spring boot, it is more modern and easier to learn in my opinion. Try https://micronaut.io/launch/ to create your first Micronaut application. They have a lot of great tutorials on https://guides.micronaut.io/
