Maybe you could like stick UV lamps in the sides to try and kill the germs? Also not like your regular fridge isn't full of germs.

Just googled it, they do, apparently, have it in current premium fridges, uv and cold works better, than just uv or just cold

plus if its just gel, on top of uv lights you can probably just scrape and replace the gel id imagine. 

i wouldnt want a whole fridge like that, but its not too dumb a concept for a separate wall panel for fruits or quick grab cold snacks. plus if i can color the gel, thatd be a kick ass fucking wall feature for a modern/scifi based house.
