[MOD] Inside Scoop - Ask the coffee industry

This is a thread for the enthusiasts of /r/Coffee to connect with the industry insiders who post in this sub!

Do you want to know what it's like to work in the industry? How different companies source beans? About any other aspects of running or working for a coffee business? Well, ask your questions here! Think of this as an AUA directed at the back room of the coffee industry.

Industry folk, feel free to answer any questions that you feel pertain to you! However, please let others ask questions; do not comment just to post "I am _______, AMA!” Also, please make sure you have your industry flair before posting here. If you do not yet have it, contact the mods.

While you're encouraged to tie your business to whatever smart or charming things you say here, this isn't an advertising thread. Replies that place more effort toward promotion than answering the question will be removed.

Please keep this thread limited to industry-focused questions. While it seems tempting to ask general coffee questions here to get extra special advice from "the experts," that is not the purpose of this thread, and you won't necessarily get superior advice here. For more general coffee questions, e.g. brew methods, gear recommendations for home brewing, etc, please ask in the daily Question Thread.

Best resources for learning about coffee?

I’m always intimidated by people who know the difference between beans based on where they were grown, how they were roasted, etc.
I know some basics but am wanting to learn more. Is my best hope just googling/ finding YouTube videos?

how to get the cortado taste in a bigger drink?

so my favorite drink to make is a cortado but i really enjoy having a larger drink to sip on while studying and i finish a cortado in like .2 seconds. how can i get the same taste in a larger drink without adding a lot more espresso? ive thought about getting decaf but i don’t want to buy more coffee at the moment bc i have quite a lot. and adding more milk or water messes with the taste.

Using a filter at bottom of French Press for easy cleanup?

I would like to make cleanup from my daily french press (FP) coffee a little cleaner and easier. I have a septic system so no grounds down sink, of course (not that that's ever a great idea anyway). I see Caffi has a product that is essentially a filter bag that goes in FP first, then coffee, the strainer/plunger when ready. The filter bag essentially drops out into compost or bin after that.

But: 1) do they work?; 2) do they affect flavor?; and 3) they are expensive!

So I am looking for a hack, I guess, to experiment with. Wondering if anyone has tried just putting a regular pour-over filter in first, then coffee, then strainer/plunger? If so, how did it go? Easier cleanup, or just a boondoggle?

Question about moka pot grind size, coffee beans, and materials

Hi everyone!
I’m looking to learn more about making better coffee with a moka pot. Is there a good guide that explains how to adjust the grind size for medium roast vs. dark roast coffee?
I’d also like to learn more about coffee beans, such as which regions they come from and how the origin affects the taste.
A few other questions:
What grind size works best for medium and dark roasts?
Does the coffee’s origin (Brazil, Colombia, Ethiopia, etc.) make a big difference in taste?
Is an aluminum moka pot better than a stainless steel one?
Can stainless steel moka pots work on induction cooktops?
Are there any good guides or tips for beginners who want to get the best results from a moka pot?
I’d appreciate any advice, guides, or personal experience. Thanks!

How to become an espresso tech in nyc

Hello!

I’ve been a barista for the last 5 years and I love my job and working in coffee in general but unfortunately there is nowhere for me to go up from here.Ive taken an interest in becoming a tech but I have zero experience working with electrical or the diagnostics in repairing a machine but Im absolutely willing to learn.

The issue I’ve come across is that not many people are teaching the skills to be able to do this job, im seeing that it is easier to understand the work if you have some sort of trade experience like electrical or hvac but honestly if possible id like to be able just to focus on the one path (im aware id probably learn the basics of hydro/electrical things)

Im planning to email big companies like la marzoco, simonelli, etc etc , and I’ve also looked into workbench coffee labs and trailblazer coffee but both are those courses are a pretty penny and im hoping to save that as a last resort

But im reaching out the coffee community for any leads I might’ve missed.Truly any advice or recommendations would be greatly supported. I love working with coffee so much and Im very excited to expand my horizons in this field :)

Best way to scratch the coffee shop itch?

I like the ritual of grabbing an iced coffee from my local cafe in the morning. Walking over, getting a cold drink, sitting for a bit in the environment, walking outside with something to sip on.

That said, it feels pretty expensive and wasteful as I have a decent set up in my apartment (espresso machine + pour over).

How have people best scratched that itch?

I’ll stick a coffee in a thermos sometime but doesn’t hit the dopamine the same way (yes lizard brain)

Some ideas:
1) Get a thermos that feels more like a to-go cup. Eyeing one of those glass Keep Cup tumblers where you can feel the temp
2) Buy a stack of disposable coffee cups and use those. Feels wasteful still but still a lot cheaper.
3) Embrace my millennial destiny and keep consuming (do I really need to OWN a home??)

Thoughts?

Not sure if anyone’s ever tried to mold coffee jelly, but if so, what did I do wrong? 🥲 I wanted it in cute shapes, but now I know that’s a no go.

The fermentation project

Curious to see who else out there bought kits and is taking part in this experiment? If you are participating, how do you plan on preparing your coffee? Will you do it as a cupping or brew single cups of each one?

I bought two kits from different roasters and i am excited to see how the live event goes tomorrow, but I can’t decide how I want to prepare my coffees…. I have never done a cupping before and I don’t know if I want this to be my first experience or if I should do it as pour over, since I already know my grind settings for those type of cups.

Curious to see how others are planning to participate!!
