Homemade / home assembled Last night's dinner.
Thanks to whoever suggested slow cooking silverside in a post last week I won't be cooking it any other way in future. It was firm enough to slice but soft enough to break up with a fork. Due to recent serious illness and allergies I now have a very restricted diet which includes no added salt, limited spices and no alliums. I basically live on boiled rice and poached chicken.
Silverside cooked in the slow cooker overnight in 1 litre of homemade beef stock, 250ml red wine, good glug of Worcestershire sauce, glug of light soy sauce. When beef was cooked I removed it and transferred the liquid to a pot. Tasted it and added a little shake of pepper then added cornflour to thicken. Mash was Dunbar Standard potatoes boiled in homemade vegetable stock, mashed with Ballyrashane butter. I also had sweetcorn but it was in a bowl on the side. Yes I really do like that amount of gravy and as it's a liquid counts towards my daily liquid intake. The gravy was so tasty (best I've made in months) I could have drunk it by the cup which I did for lunch served with home made wheaten bread today and the rest I'm going to freeze for Christmas dinner.
For the first time in almost a year I actually felt like I'd had a real meal.

Homemade / home assembled Buckfast infused butcher's beef link sausages
These were very nice. A good quality beef link sausage, with a little hint of sweetness from the buckfast.
Bought online from Rendall's butchers in Stirling.

Question Most traditional Greek Yogurt available in the UK?
Hi everyone. I just got back from a break in Lindos. It was my first time in Greece 🇬🇷
For breakfast I enjoyed enjoyed Plain Greek Yogurt topped with Walnuts and Honey. The Yogurt was nothing like anything I've tasted before in the UK. Thick, creamy, it was delicious!
QUESTION: Doesn't anyone have a recommendation for the closest thing avalibe in the UK? What should I be looking out for in terms of fat content?
Yamas!

Homemade / home assembled Duck salad (yam ped yang)
I got two reasonably big duck breasts on a yellow-sticker deal last night. Pan roasted both, ate one over the kitchen sink. The other, I saved for today’s lunch. Cucumber, shallot, tomato, spring onion, and mint tossed in a lime juice, fish sauce, and palm sugar dressing.

Question Homemade Tzatziki Recipe?!
Hey all! I’m back from a trip to Greece but unfortunately my sister missed out coming due to multiple reasons. We are celebrating her birthday this weekend so decided to make her gyros etc so she feels a bit included in the family holiday she missed.
I’ve been tasked with the tzatziki and as a vegan I cannot taste the recipe i’m making (i don’t mind using dairy for others). That being said, does anyone have a good go to tzatziki recipe I can use? There’s loads online but all slightly different!
Good brands of greek yoghurt I can find in the shops would be a good bonus!!! I’ve bought a fine mesh strainer for the cucumber as i’ve read this is essential!!
TIA!

Question Hot Chocolate
What's everyone's recommendations?
Looking a good hot chocolate for my partners. She tried Whittards which was a let down so looking for other options.
Homemade / home assembled I can taste again!!! Fried rice and spicy teriyaki courgette
Fried rice with mushroom, pork mince and onion mix (all left aside from a previous meal when I wasn’t sure what to do with it - covered in five spice, dark soy and aromat), and an egg for protein.
Courgettes sliced into almost fries, then fried with garlic, chilli and teriyaki. No picture of those as I sat on them and they didn’t look pretty anymore :(
