It will work until they make boats break brittle ice

Given how fast boats are it probably should be fine either way. You would glide past before it cracks further. Just don't slow down. Only the start and end would be tricky i think. The parts where you are slow.

Pit stops/start and end of the ice road can be made from regular blue ice

No. When an entity touches the block for the first time, it is immediately sent down a level.

what is brittle ice? Is that what forms with frost walker enchantment?

In the latest snapshot they introduced the new brittle ice block, the first new full block of the update

When a mob stands on this new block it begins to crack and has 3 cracking stages before the block is breaks and drops the mob.

When water from any state (source or flowing) meets the sides of the blue ice block, it creates the brittle ice (as you can see in the bridge builder in the post)

so if a boat moves really fast it can just glide on it without breaking?

Right now, boats do not cause the block to break.

You also cannot just move fast off the block to prevent it from cracking, it cracks whenever a mob steps on it. Imagine you fall onto the block or walk onto it, it will immediately crack 1 level and will then take a few seconds for each level after that

I has some potential for traps but it looks a little useless for civil applications.

New Block from the newest pre release. An Ice block that breaks if you or a mob stands on it

I only tried farming ice once for a Nether Tunnel. Now, I actually will have the patience to make this 😎

You will need to get nether water for the wogged stairs though if you want to use it in the nether

I meant just gathering the ice with silk touch

If you do this in the end it’s better to use frosted ice (from frost walker enchantment) because it won’t melt.
