Recipe Homemade pork gyozas

Filling:

- 500g ground pork
- 200g chopped cabbage (used regular canbage instead of chinese)
- green onion
- soy sauce
- sesame oil
- garlic
- ginger
- (optional) oyster sauce
- a bit of sugar
- salt
- MSG

Dough:

- approx. 280g flour
- approx. 130ml hot water
- salt

Worth mentioning: my curse is never guessing proportions. I got exactly 30 gyoza wrappers and was left with extra filling. I'd say 400g flour and 180ml water would be safer, idk.

The filling works great fried and served over rice, if you end up in my situatiin

For the filling, I started by chopping the cabbage and letting it sit in a bowl with some salt for 20-30 min to draw out as much water as possible. Once the cabbage is squeezed out well, add it to a bowl with the ground pork, finely chopped spring onion and the rest of the ingredients, mix until combined, and put it in the fridge.

To check if the mixture is salty enough, I usually fry a small test piece.

For the wrappers I've tried rolling them out with a rolling pin in the past but they came out pretty uneven, so I figured since I have a pasta machine I might as well use it 🤷🏻‍♂️

Mix the dough with the hot water, knead it well, and let it rest 20-30 min in a covered bowl so the flour can hydrate.

As a side note, honestly, the easiest option is to just buy ready-made wrappers.

I ran the dough through the pasta machine. Mine has 7 thickness levels and I went with the 2nd thinnest. For the shape, I cut out circles using a 10cm cup.

Put a small amount of filling on the dough and wet the outer edge of the wrapper with water so you can seal in the filling. I can do 3 pleats per side but sky is the limit.

I recommend this technique.

For cooking, put them in a pan with hot oil, and once the bottoms are browned, add water, cover with a lid and steam them.

I served them with plain basmati rice and a sauce made from soy sauce, spring onion and sesame oil. Furikake works great on the rice

Cheers 🫶

Ever since I moved to Bangalore, I’ve been visiting Youmee whenever I’m craving some good Japanese food. It’s one of those places I keep coming back to, and the food has always hit the spot!

A few things I love about this place:

Sushi cravings: Always a solid choice when I’m in the mood for sushi. (Veg - Yasai Tempur Roll, Blush Siracha, Youmee Garden Dragon and Non Veg - Rainbow Maki, Prawn Tempura, Salmon Aburi Roll)

Ramen comfort: Perfect for those days when you just want a warm, comforting bowl of ramen. (Veg - Veggie Delight, Vegan Coconut Ramen and Non Veg - Katsu Ramen, Youmee Signature.

Also try New York Cheese and Wok Toss Noodles.

Taste and quality: The food has been consistently satisfying, which is a big reason I keep coming back.

Great for Japanese food cravings: Whether you’re planning a casual meal or just craving sushi and ramen, it’s worth checking out.

Honestly, Youmee has become one of my comfort food spots in the city. If you’re in Bangalore and looking to try Japanese food, I’d definitely recommend giving it a shot!

Anyone else here a fan of Youmee? What are your go-to dishes there?

Brought a salmon home from the beach a couple days ago. Butchered it, cured the roe, and cooked a filet yesterday. Tonight I made broiled salted collars, a teriyaki filet, and ikura hand rolls, with some ohitashi, horenso gomaae, sunomono, a side of pickles, and sake (of course). Life is good. Grateful for salmon and the tasty nutrients they provide. Still have 3/4 of the fish left. I plan to cure it tonight, smoke it tomorrow, give some away, and enjoy smoked salmon for the next week.

I like a soup called "3.8 Billion Years of Wind." It’s rich and spicy—but not too hot—and the saltiness is just right. The fried chicken in it is delicious, too.

Food was great. Service was aggravating, but I think I understand why. Tablelog rates this place as 3.48, decent rating from what I understand regarding Tabelog reviews. Google shreds it with 3.7, I partly understand why. I am realizing the tourist heavy places have issues you wont get with mom and pop or neighborhood spots. Still having incredible experiences my second time here and am already fantasizing about a third!

Question Hey, I need some suggestions while im sick.

So my taste buds makes mostly everything taste bitter maybe besides some fruit, tea or a few drinks. My appetite isnt the best currently, and i was wondering if someone can suggest light foods or light snacks to help it out, I've been trying other things and it makes it difficult to consume. I had a friend suggest umaibo.

Red miso ramen and mushroom oil ramen, plus extra noodles and pork on the side.

No regrets. Although we may have slightly overestimated how hungry we were.

The most meat-focused ramen I've ever had. Extra noodles were free too! Do you guys like to get rice with your ramen? If you've never tried it, you definitely should!
