One was free, one was $13 a dozen, one was full bodied and buttery/flavorful one thin and light
I guess there's no doubt which is which and why?
Unfortunately the best ones are only available once in a while

Ordered a sausage, egg, and cheese biscuit before hopping in the Amtrak in New York. Jacob’s Pickles delivered this monstrosity! Delicious. Great texture, tbh. Definitely a knife and fork job.

Jammy Airfryer Hard Cooked Eggs
With salt, pepper, Chinata and Long Lot! Yum!!!
The experiment was the airfryer.
Cold eggs straight into the airfryer at 270F for 15 minutes then directly to an ice bath. No mess. Easy peeling. One less pot to wash. I'm sold!

Hard boiled, or soft.
HB - Add eggs to boiling water and cook for 7 minutes. Remove from heat, cover and steam for 7 minutes. Drain and under cold water. I keep a large stainless steel bottle filled with water in the fridge and add the cooked eggs to that for 10 minutes.
SB - I remove the egg after 6 or 6 1/2 minutes and do the cool down process, but not as long. I handled them a little bit gentler than the hard boiled eggs.

Got these blueish tiny eggs with orange yolks from TJs. The yolks came out perfect for this sando.

Folded egg sandwich with Chili crunch Kewpie Mayo and American cheese.
I had a craving for a better version of the McDonald's folded egg. My idea was to make it almost like a French omelette where it's got small curds in the middle. This was my first attempt. A bit over done but a lot was learned.
Are you team half cut or diagonal cut?

I have always been wanting to master the foldy-curdy scrambled eggs that restaurants do! (pic 2)
However it always turns out rubbery or mushy (pic 1 today).
Here are my steps:
1. Butter on pan on low heat
2. Pour 2 beaten eggs
3. When bottom is set, I used spatula to push inwards from the sides
4. Repeat step 3 until it is cooked enough and not overcooked, low heat all the way
Done wise I’d say it’s good! I just want it to be like pic 2 😭😭
Would appreciate tips!!
