Ask ECAH Is My Sludge Methodologically Sound?

Title. I’m a person with severe health complications and a laundry list of defects, both of which make eating rather difficult sometimes. I’m concocting something I’ve dubbed “The Sludge”. It’s half a banana, two Kirkland protein shakes, six-thirteen strawberries, six tablespoons of soaked chia seeds, three handfuls of spinach, two dissolved B12 capsules, and really anything I can throw in there to stave off the madness that lingers each time I feel its fell viscosity caress my soft palate.
Is this a good start, or am I hurting myself? By my calculations, I’m reaching 90g of protein, 30g of fibre, a modest helping of iron, and some smatterings of essential vitamins. I figure it’s better than eating nothing but a handful of potato chips and half an apple.
How can I improve my sludge affordably? What can I add to this reagent for maximum nutritional punch? Please bring it on. I’m not scared anymore. Not anymore.

Food Give me your best "soft" food recipes!!

After weeks of toothache, the one thing I've dreaded most has happened.. I have to get a root canal 😭

Prep work started today and I've been fitted with a temporary filling which is only designed to last 1-4 weeks. My permanent filling isn't being fitted for 16 days and I'm petrified of the temp one falling out in the mean time. In efforts to preserve it as best as possible I'm on a strict no hard or chewy food diet!

Please share your favourite soft food recipes and snacks to help a girl through this anxiety-inducing time! There's only so much tomato soup one can take!

Bonus points if recipes are plantbased (Im not, but my partner is and it'll save making multiple dishes). I'm also gonna be poor post treatment so the more affordable the better!

Thank you so much in advance 😄

Eye of round roast French dip sandwiches

Just got a whole eye of round roast for $5.99/lb CAN. That’s cheaper than ground beef. I cut it into two roasts, followed this recipe and it was absolutely fantastic! The key is to not overcook it (medium rare max) and slice very thin. The recipe is from Serious Eats. They call for top of round but I’ve made this twice with eye of round and it’s fantastic. They’re both cheap cuts so get whatever’s on special. Also, i didn’t have dried mushrooms. This sandwich really satisfies that red meat craving while staying on budget!

Ask ECAH How to make chicken breast somewhat tender?

Hi, everyone. I’m a type 2 diabetic trying to lower my cholesterol, while also on a budget. I found a couple family packs of chicken breast on sale ($1.49/pound!) last week and put them in my freezer. Any ideas on healthy meals that don’t make the chicken dry? I’m not asking for miracles, I know it’s hard with the low fat percentage of chicken breast. I don’t own a slow cooker. Thank you!

Ask ECAH What meals can I make outside of meal prepping the entire week?

I’m a full time college student and also working near full time hours at a retail job. I struggle to eat consistently and healthy despite wanting to. I really really hate the taste of food that’s been in the fridge for 3+ days (besides soups)

I want to cook and eat consistently. Are there meals that can be made across the week that wont wear me out a ton preparing? Breakfast I have a decent idea of things to make but lunch and dinner I get lost on what to make in the first place.

recipe Can you use water for overnight oats?

So I am trying to get more protein in, and I looked at overnight oats to bring to work. I was looking at this recipe, and was wondering if I could use water in stead of milk? Will the water make it taste bad?

40g oats
25g protein powder
100g frozen berries mix

Anything else you suggest I use? Thank you!

Edit; I’m cutting so prefer to use water instead of milk and can’t use almond milk since I’m allergic to nuts

I feel so good after eating a can of sardines with crackers

Especially the ones in Louisiana hot sauce. It's so cheap too. Like a dollar for a can and crackers are several dollars for a lot. I feel like I can lift a car afterwards. It's a solid meal

Guys, real quick because I’m hungry, and just finished working out. Now I have a can of tuna, and I got bored from eating it straight out of the can.

Any ideas?

recipe My mujadara recipe

I haven’t seen a recipe for mujadara posted in a while and it’s pretty cheap. Here’s my recipe (sorry no picture at the moment):

Mujadarra with Cracked Wheat

COOK TIME: 1 hr
SERVINGS: 6 cups

INGREDIENTS
• 1 cup Brown lentils
• 3 Tbsp Vegetable oil
• 5 yellow onions, diced, about 6 cups
• 2 Tbsp Ahlia Baharat Seven Spice mix
• 0.5 cups Cracked wheat (bulgar), size #4 if possible, or #3
• 2 Tbsp Extra Virgin Olive Oil
• 1 Tbsp Fresh Squeezed Lemon Juice

# Toppings (optional)
• Cucumbers
• Banana peppers

PREPARATION STEPS

  1. Add the lentils to a pot with 2 cups of water and a pinch of salt. Bring to a boil then reduce to a simmer and cook exactly 7 minutes. Remove from heat and set aside.
  2. Meanwhile, in a Dutch oven (for even cooking, or any wide bottom pot), add onions and the vegetable oil. Cook on medium for about 7 minutes, add the seven spice and 1/4 tsp of salt and cook an additional 13 mins with occasional stirring to caramelize the onion. Start reducing the temp about half way through as the water starts to cook out of the onions. Need to get the water out of the onions but not burn them.
  3. Add 2 cups water to the onions and bring the mixture to a boil. Scrape the bottom of the pot to remove any stuck onion (deglaze) and reduce to a simmer.
  4. Add lentils and any water in the pot to the Dutch oven. Add the cracked wheat and salt and pepper to taste. Bring everything to a boil then reduce to a simmer and cover. Cook 25 mins or until wheat is soft. Remove the lid and continue to cook until liquid is gone or to taste.
  5. Remove from heat. Add 2 tbsp olive oil and 1 tbsp lemon juice. Salt to taste.
  6. Serve with additional drizzle of olive oil and lemon juice to taste.

I want to make a meatless pasta sauce using lentils. Are they good on their own or are they better with tomatos/tomato sauce?

I have lentils but do not have any tomato sauce or canned tomatoes on hand. Do I need to go to the store for some canned tomatoes and tomato sauce or can I use just the lentils without the tomatoes? which tastes better?

Ask ECAH Breakfast that gives you energy

I’m looking for some foods I can eat that will give me energy, but I always get really tired after I eat. I have a fast metabolism, so I get full fast but get hungry sooner. I usually have snacks, but I can’t live off of protein bars and apples.

I’ve been eating egg & avocado on toast (sometimes with tomato), but I always feel really full and really tired after.

What foods give you the most energy without making you crash?
They don’t have to be “breakfast” foods, and please include any traditional foods you love!

For context, I’m a college student & work nights, so time and money are a little tight. Just want to know what other people have found that works for them.

Thank you!

Ask ECAH Newly moved out alone and looking for inspiration and advice on meal planning

I’m moving out and will be living alone for the first time. I’d like to learn how to cook decent, healthy meals without spending a fortune.

I’m looking for advice on beginner-friendly recipes, meal planning, shopping on a budget and cooking for one without wasting loads of food. Ideally, I’d like to build up a repertoire of meals I can make regularly rather than relying on ready meals or eating the same thing every day.

What tips, recipes, websites or YouTube channels would you recommend for someone starting out? Whats your go to recipe or approach to meal planning?

Ask ECAH Best olive oil sprayer you'd buy again after using it for a year?

I've been trying to use less oil when cooking, but pouring straight from the bottle makes it way too easy to overdo it.

A refillable sprayer sounds perfect, except I keep reading about ones that clog or stop spraying after a few months. I'd rather spend a little more once than keep buying cheap replacements.

What's the best olive oil sprayer you've used that gives a light, even coating and lasts?

Food Help - Needs some ideas!

I might be asking for too much here but one can only hope.

Some context. I am a neurodiverse individual and I do CrossFit about 3-4 times a week. I am based in the UK and my goal has always been to get strong but also to just manage my weight and maybe lose a little extra fat. I work for a charity and I am on minimum wage so do not have a lot of money at all.

I try to eat as little ultra processed foods as I can.

The reason I mention I am neurodiverse is that I'm funny with my food textures sometimes, so I can be quite particular in what I like to eat. I had a period of time where I was eating chicken breast, rice and veggies pretty much everyday for dinner. I mean it did wonders for my weight and muscles and I made a lot of progress. However, chicken breasts here in the UK are not that cheap and I can't really afford it everyday. I'm rambling....

I need an easy, high protein dinner that I can either fairly easily bulk make on a Sunday or make quickly in the evening. I can't eat any other type of chicken. I don't like the meat of chicken thighs and can't eat anything off the bone. Not a fan of minced chicken or turkey either. (You might now understand why I said I might be asking for too much 😂)

Is there anything out there that exists that is cheap, high protein, easy to prep and is clean and healthy? If I could eat tuna and rice everyday I would... But apparently I'm at risk of mercury poisoning if I do 🙃

(Worth mentioning I've tried tofu and I just don't really like it. I've tried different ways to cook it and I just can't seem to get it right)

Ask ECAH Winter squash storage

I got a box of squash for $20 at a local farmer, which was a huge deal. In the past, I’ve just kept them in that box and they last through December. They told me at the farm I could wash them off in water and bleach, and they would last even longer. I was wondering if anyone has done this with vinegar and water instead, because I don’t have bleach.
If anyone’s curious, it’s six carnival squash, 2 Delicata, 2 sweet dumplings and one acorn. I live alone and usually just cook one a week through the fall, which gives me two or three meals of squash as a side.

Edited to add:
I’ve decided based on some of the comments not to wash them before storing as I haven’t done that other years. I got something to better separate them and let airflow, and I will know to use the Delicata and acorn first. I would’ve thought the acorn had a much harder shell than the other others. So I was using them in the wrong order.
I

Ask ECAH Do raw farm beans go bad? (Stored beans in bags.)

Do DRY raw beans go bad? (Stored beans in bags.)

These are not cooked in cans, they are raw in sealed plastic bags.

I have all sorts of beans, several years old, all stored in original grocery store / manufacturer plastic bags. Originally stored indoors in normal temperatures.

I will have to store them for several more years, also indoors, but in higher temperatures (non air-conditioned HOT attic).

  1. Are they still good?
  2. Will they remain good stored in higher temperatures (non air-conditioned attic)?
  3. Should I just throw them away?

Ask ECAH Chopped vegetables vs frozen, which is cheaper?

Is it cheaper on average to buy things like tomatoes, garlic, onions, and bell peppers frozen/canned, or buy them fresh and chop them at home? I love vegetables but want don't want to spend a lot to get them.

Ask ECAH Looking for a Warm/Neutral Temp, Fast Breakfast Food

Hey all! I’m looking for a breakfast to have during the winter, especially on days I have to work. Currently, I have a smoothie with frozen fruit, orgain vanilla protein powder, chia seeds, and oat milk.

Unfortunately for me and my love of routine, those get unpleasant once it gets below 30°. I am looking for a winter replacement. Here are my desires:
-must be at least 350 calories
-should be neutral temperature or warm
-vegetarian
-takes no more than 5 minutes to prepare in the mornings (I’m fine doing meal prep weekly or the night before though)
-will keep me full from 8:30-12
-I should be able to eat it one handed/in the car
-bonus points for nutritionally balanced/well rounded, as well as bonus points if it’s cheap!

The current options I have are
-Huel Black: this is my favorite option but it’s a little pricey right now (I’m also a little scared I won’t like it)
-2 packets of instant oatmeal mixed with a quarter cup of chia seed pudding: this seems like a good option, but its carb heavy and I worry about it’s ability to keep me full
