Recipe help for a birthday potluck

So my bestie is celebrating on Friday evening and I had a great idea for a dish I could bring but I'm having trouble pulling it off.

My idea is rolled up crispy tortilla wraps with a cottage cheese/green onion and olive mix topped with some melted cheese. Now, I can get everything right...except for the crispiness of the tortilla.

Adding the mix to the tortillas, rolling and baking ends up with soggy-ish tortillas. Pre-crisping the tortilla "spirals" by themselves just leaves no space to put in the mix and it tastes too "raw". Crisping the tortillas before turning them into spirals leaves me with cracked tortillas oozing all over in the oven.

The recipe isn't the issue, it's my method. Anyone able to instruct me? They'll be served to like 14 people so I want to do a good job :') Thank you! My fallback is simple grilled veg and shrimp skewers but I'd love to try this one.

Flour or corn tortilla?

Honestly that's a really wet mix, and that's your biggest problem. That fluid has to go somewhere.

And are you sealing the ends, or are they open like an enchilada? You want the ends covered, like a burrito.

They're open, sadly, but the top is covered in shredded mozzarella if that counts as a "plug" haha.

That plug is going to melt. And I'm assuming you mean flour tortillas. ( I'm just guessing, based on the filling you picked)

You don't have to crisp them first, just heat them up after you spray oil on both sides. Take them out BEFORE they crisp. You just want them pliable. Put your filling in, close both ends like a burrito.

I would strain the liquid out of the cottage cheese before you blend it to reduce the amount of liquid in your mix.

It probably also wouldn't hurt to use a little egg to seal the edges, and put them sealed side down so they don't open up during baking. Spray them with oil before you bake them, so they get crisp, not hard. No spaces in-between, pack them side by side. Less room to unroll.

Spray the pan, too. And keep an eye on them, bc you're really just crisping the tortillas, nothing in there needs to be cooked.

Yes, I apologise, flour tortillas. Slipped my mind.

I will try straining! I didn't think of that. Thank you so much for your help, I'll try this method :)

Is this a pinwheel situation or taquitos?

Pinwheels, yeah. I don't want to fry them like taquitos. Maybe it's the mix, perhaps I should make them out of beef.. or maybe a cottage cheese alternative? Perhaps skip the cheese topping and just mix in the shredded cheese as the filling.

Have you tried paneer? It’s cottage cheese cosplaying as tofu.

LMAO that's a great description! I haven't no, but there's plenty of asian food stores in my area, so I should be able to find some tomorrow

It’s Indian…I think even TJs carries a version. But yea, maybe a Patels or Asian grocery store. That can take heat too, you can fry it like tofu and it’ll keep its form.

Have you tried to covering the outside with butter then air frying them or baking them in an oven to get the crispy?
