Fast Cheap Dinner Tonight

What are you making? I’m doing sausages, mashed potatoes and maple buttered carrot coins. I’m using canned gravy for the potatoes, because I hate making gravy, HP sauce for the Bangers. Loblaws made the bangers and called them that. About $3.50 a meal.

No onions or sour creme?

Not this time, but I do make mashed potatoes with sour cream and dried onion flakes. I like it with minute steaks as it has a baked potato vibe.

Coule cans of chili w beef, taco seasoning, garlic, ect and thinned w a bit of beef broth. Once it's dished up, add a generous helping of cheddar cheese, and eat w tortilla chips, Scoops in my case. Could add some corn for a veg, or serve over rice or potato.

Chicken and rice.

1 cup rice ($0.25), 1/4 cup sauteed garlic, celery, onion that I freezer prep into ready to use pellets) 1/4 of a Costco rotisserie chicken (a chunk of breast and one leg) $1.50 4 white mushrooms sauteed in olive oil.($0.40)

It made a lot.. dinner for two and enough leftovers for a couple lunches. Maybe $2.25 all in.

Cooked in the instant pot... Using the "pot in pot" method. Rice in bottom of a metal bowl that fits inside my 6qt IP. Then the mushrooms and veggies stirred in. 1.5c homemade chicken broth (made from those Costco chicken carcasses). The diced chicken on top. Cook 9 min with a natural pressure release.

When the pin drops on the IP pull the bowl and stir it all together. Season to taste with salt/pepper.

Do you freezers prep the onion/garlic/celery raw, and then thaw and sauté?

I sauteed it all together.. then spooned it into an silicone egg bites mold to freeze. After it's frozen solid I vac seal all the pellets in a ziplock bag. It's already cooked and ready to use in a recipe

To use one i microwave it to thaw

They are good for soups, spaghetti sauce, and chili

Breaded pork chops with garlic mashed potatoes.

Pork is like $2 per pound. Even chicken is closer to $3.50 where I am at.
