Forgive the delicious but raggedy baked potato. This is from a 4 pack of steaks that cost $39 at Costco. Coffee spice rub before sealing, 3 hours at 135, ice bath, 3 minutes each side in a cast iron, maldon after slicing.

Chicken drumsticks help

I've not done them before and the internet seems to be all over the place when it comes to time and temperature.

Could you give me some ideas please for a two hour cook and say a seven or eight hour cook?

Would love to get crispy skin afterwards as well .

Just to add I find too much red around the bone unappealing, even if it is safe, so would like to avoid that as much as possible

Had to edit this. I'm not looking for cooking tips on drumsticks, or the merits of sous vide cooking. I'm asking for a time and temp for sous vide drumsticks.

Question Best bags for higher temperature

I've been noticing that I am get odors and some discoloration when sous vide things at 140F or above with current Bonsen Kitchen bags. I do double seal. I also tried double bagging with double seal for a current crafting project and ended up with blue dye in water (scrubber everything down well, container didn't hold color and my sous vide is stainless steel).

I am wondering if there are better bags out there that can handle higher temperature (204 F) without anything bleeding through. I remember growing up with the Sears boil in bag type bags and the sealer for them. So high temp bags exist. I just need to know which one are worth the money.

Question Sous-vide Striploin

For the meat, I used 350g of Australian striploin from Costco.

I cooked the meat sous vide at 55°C (131°F) for 1 hour and 15 minutes,
then seared it in a cast-iron skillet for about a minute.
I used a small amount of oil and added a knob of butter halfway through,
but it didn't develop a good crust—and the butter burned almost instantly.
The meat ended up well-done; it wasn't tough,
but it was quite dry and crumbly. What did I do wrong?
Was it the sous vide process, the searing, or the chilling?

Question Recommendations

I am looking for a sous vide cooker, but for dying fabric. Because I’m not using it for food I don’t really need the most fancy of them all. Would anyone have any recommendations for cheaper ones that still work and maintain temperatures correctly? Particularly when dying wool I need to make sure the temperature doesn’t go above a certain level due to malfunction.

Sorry if this isn’t allowed because it’s not food related.

Edit: you all freaking rock. Thank you for the tips.

Question how to keep chicken juice off the seal?

recently started experimenting with sous vide for chicken breasts, but sliding raw meat into the bags always leaves a slimy trail right across the opening.

tried sealing with an older foodsaver, but the heat strip won't melt through that greasy film. saw someone bring up gasbye, it features a double seal bar. does having two heat lines push through edges?

what’s the trick to keep the sealing area bone dry when dropping raw poultry in? thanks

Question Gourmia GSV 138 fell in to the cooler full of water.

So while I was making some fantastic steaks yesterday my sous vide fell into the water bath. It immediately trip the GFI, I unplugged it and I pulled it out. I dried it out overnight but when I plugged it in the thermometer [at room temperature] was reading 118 and it looks like there's liquid behind the LED LCD display. Anybody have this happen to them? Any chance for recovery or do I just buy a new unit?

P.S. the steaks had been in for 2.5 hours so no food was lost in the fiasco. By the way they turned out amazing! Sirloins were salted for 2 hours, then bagged with pepper and garlic, water bath at 132 for 2.5 hours, then finished with a blow torch. We were in the middle of hurricane Isaias, so using the BBQ grill and cast-iron outside was not a good option. The garage was dry enough to take the steaks for a ride under the flame.

Question Vacuum sealing mason jars

I recently got the Nesco VS-12 and want to vacuum seal my mason jars with dry goods for a little longer preservation (without oxygen absorbers). Does the VC-8100 do a good job? I understand that I would be placing the mason jar inside of the canister. How many oz can the mason jar be to fit inside it? I still can return the Nesco for another vacuum sealer the has a different attachment that allows me to vacuum seal bigger mason jars.

Start at a higher temperature?

As title says, if I were to sous vide something at (argument sake) 60C for 1.5 hours, can I just boil some water to 80C, set the circulator to 60C and let the temp drop to the target temp? Would it affect the time?

Anyone used a ninja combi for sous vide'ing before?

I recently purchased the Ninja Combi and used it for Sous viding a few weeks gao. I filled the pan with water and put a vac sealed bag in there. I set the temperature to 160F. I also put a lid (the one that came with the Combi) on.

After 1-2 hours, I measured the water temperature and it was 170F, so seems it overheated. Has anyone else had this experience?

I have a sous vide precision heating tool, so I think I'll just use that in the future for sous vide. The combi doesn't seem to have the precision...

I'm thinking of Sous Vide'ing between 125-130F for 1-2 hours. What do you guys think?

A local grocery store is putting on a sale. 10.99/lb. Select grade. Have to buy the whole loin

Thoughts? Worth it? Sale ends Sunday

Edit: I was thinking cooking the whole loin sous vide to ensure tenderness

Never going back to another method for pork loin

3.75# pork loin roast was seasoned, vacuum sealed, and frozen; I crosshatched the fat cap before bagging. Dropped it into 140F bath from frozen, cooked for 6 hours. Unbagged and dried with paper towels, then onto rotisserie in the air fryer, 400F for 15 minutes (please ignore the bald spot on the exterior, I couldn’t resist trying a piece of the crackling). Most tender and juicy loin I have had without a brine. This will be my method for cooking them moving forward.

Salamander or portable induction?

My wife doesn't like that the whole house smells like meat for three days after I sear a steak indoors and i'm not happy with the crust I get on my pellet grill... So we're looking for a different solution.

I'm currently thinking about either getting a portable, salamander broiler. Something like a bighorn 1500F. OR I'm thinking about getting a portable induction stovetop like the nuwave pro chef, and using that with my trusted cast iron skillet. Any thoughts on what would give the best seat with the least gray band? I was leaning induction but heard some noise about uneven cooking being a risk for the portable tops.

Open to any recommendations

Question Time and temp for these?

“Pork Shoulder Butt Country Style Ribs” … Not what I expected to get in my grocery order, as I was supposed to get a different pack of ribs. Two of these have bones in them and the other 4 don’t. I’ve got 8-24 hours to play with. Also open to crock or instant pot if that’s a better solution.

Also tee hee he said “butt country.”

UPDATE: went with 160 for 22hr15min (no specific reason for the time). I got pretty much an exact hybrid of fall off the bone pork on the left side of the rib and sirloin steak on the right side. Broiled with some apple bourbon BBQ sauce for about 5 mins. Pretty tasty. Will probably make a ragu next time as a few others suggested.

Thank you!

Do I need to take this out and rebag it, or can it go straight into the water bath?

Post image

Picked this up at Costco, and was planning on sous vide tomorrow. Should I rebag it, or can it go in like this (with the labels removed)?

Also, I read 74°C for 24hrs. Does that sound right? I've only ever used pressure cookers for pork shoulder.

Accidental Pork Chop Long Cook

I like to do beef roast meats like chuck for long cooks and usually buy multiples of them when the price is right at my local market. I package them ready to go into the bath and throw them in the freezer. This last time I saw some nice looking pork chops and got those too.

I assumed the bag I grabbed out of the freezer last night was a roast, but this morning when I woke up I realized that I had grabbed the chops.

135 for about 12 hours, seemed way too low and long of a cook for a chop, but i seared it off anyway for lunch, and I gotta say I like it. It was a bit over-salted and so it was kind of a mix between a very tender chop, a ham flavor, and a sort of "pressed" pulled pork, you could take a fork to it without a knife.

I'm not mad.

Recipe Request Gifted a Sous Vide - Get Me Started!

I was just gifted an Anova Precision Cooker 3.0 for my big 30 birthday. I've heard tons about sous vide and seen plenty of videos, but never gone deep into the research on recipes and methods. I've wanted one for a long time, but have no clue where to get started.

What are some "sous vide for dummy" recipes to get my feet wet? I have a vacuum sealer and a large pot to use as a container. Thank you!
